Oh Betty

Oh Betty

Oh Betty
Oh how we love thee
Your meringue so firm,
your pie crust
the perfect flake,
your coffee cake
just the right amount of butter and spice.
For 70 years your chiffon cake
has made us feel fancy and little bit French.

You keep the classics alive
gingerbread, devil’s food cake, fruit cake, and jelly rolls.
And ahh, the cookies.
30 pages of cookies
thumbprints, jumbles, crinkles and meltaways.
No childhood is complete without your gingersnaps, snickerdoodles, or dream bars.
No pot luck, funeral, or country wedding is complete
without your pineapple upside down cake, rhubarb pie, or chocolate brownies.
You are present at every rite of passage and festive holiday.
Generations of Christmases taste of your
Russian Tea Cakes, Cream Wafers, and cutout sugar cookies.
With frostings, fillings, Finnish and French cakes
you have broadened our culinary skills and taken us to far-away places.

Born in 1921 you have kept up with the times
with a new hair-do and recipes now online.
You and your red spoon
they say are cultural icons
but we think of you as Aunt Betty
the one we consult for dinner, party, or Sunday brunch.
Your pages and our aprons are worn, tried and true
Oh Betty
how we love you.
